The pozole, the barbecue of loin, the menudo, the lechón (which is a young pig baked and seasoned with pineapple, apple and olives), the roast lamb (lamb leg stuffed with rice and spices), the tostadas de cueritos de cerdo en vinagre (crispy fried pork skin) and roast goat.

Sweets from Aguascalientes are characterized by the crystallization of fruits and vegetables with brown or white sugar molasses.

Among the desserts, candied fruits and nuts, coconut candies, churros (fried wheat sweet dough), amaranth and pumpkin candies, fritters and puddings stand out. Other desserts in the area are:

The festival of the skulls is celebrated between the last week of October and the first of November. During this period, skeletons and skulls made of sugar, pumpkin candies, pan de muerto, and egg salad are common.

The general atmosphere is one of joy and celebration, as a way of counteracting the pain caused by death and mourning.

In Aguascalientes, clay skulls are made and the names of deceased relatives and friends are written on them.

On the last day of the Fair of the Dead, the celebration is transferred to the local cemeteries and food is brought to share with the deceased.

4- The Assumption fair

The Assumption Fair is held in August. The center of the celebration is the exhibition of products from the region: peaches, grapes, guavas, wines and sweets made with crystallized fruits.

5- The fair of Señor del Encino

This fair takes place between November 4 and 14. Its purpose is to adore the black Christ that is preserved in the Temple of the Lord of Encino.

6- Regional Corn Fair
